What exactly is that, is it a male and female animal that has no parents listed?

I believe so, yes. Basically when you create a new animal you get a "Foundation" breding pair. Which basically means the beginning pair. You can also buy foundation pairs with tokens, and even some via free rescues.

Cool then my paleo bison's are foundation pairs, I bought them seperately but neither have a mother or father listed.

They must be. However if they are a lower rarity then they were most likely aquired via free rescues not tokens.
